What is Hyper Local Innovative Thai Cuisine?
At TAAN, we pride ourselves on time-honored Thai flavors drawn from regional recipes and the finest local ingredients, elevated by unexpected combinations and innovative techniques. To emphasize our devotion to Thailand’s most trusted food artisans, our menu lists key ingredients alongside their region of origin and how far, in kilometers, that is from our restaurant in Bangkok. A dish might star, for example, wild-caught squid from Samut Songkhram a little over 80 kilometers to the southwest; or organic, free-range pork from Nan province, almost 700 kilometers to the north. While all our dishes have their roots in tradition, our kitchen resolutely believes that Thai food should be dynamic and ever-evolving. TAAN’s chefs seek out techniques that allow the ingredients to shine to their full potential, whether these are old ones handed down from generation to generation, or newer advancements.
